Chocolate Bark
Chocolate bark is a classic dessert that's easy to make and so delicious. It's traditionally made with regular milk chocolate and filled with things like candy, dried fruits and nuts. For Canada day we wanted to make in one of our red and white desserts, so we used red and white chocolate melting wafers. Look for these in the baking section of the craft store, or at the bulk food store. Chocolate bark is one of my favorite tasty recipes that you can make for any occasion and guests always love it.
Red and White Add-ins
Chocolate bark usually has lots of fun add-ins added to the chocolate and for Canada day we wanted to stick to red and white . While we were at the bulk store we also looked for any red and white sprinkles or Canada day themed sprinkles. We also found special red and white M&Ms for Canada day and they were the perfect addition. Adding candy and sprinkles was such a fun way to add a patriotic touch. If you wanted to you could also use red and white dried fruit and nuts like dried cranberries, cherries, or strawberries and almonds for your festive treats.
Melting The Chocolate
Take care when you're melting the chocolate to make your chocolate bark. White chocolate especially has a tendency to burn easily if you try and melt it too high of a heat. If you are using the microwave to melt your chocolate be sure to use only half power, and check your chocolate every 30 seconds, giving it a stir, and then adding more time if needed.
You can also melt the chocolate in a double boiler, It gives a more even, lower heat and is perfect for melting white chocolate without burning it on the bottom.
If you do overcook the chocolate it will seize up, and remain lumpy no matter how much you microwave it. It will sometimes turn brown and look burnt also. If this happens you will have to throw it away and begin again.
If you find your chocolate is too think and not runny enough to work with easily, you can add a small amount, of vegetable shortening to the melting chocolate to make it more runny. Start with a ½ teaspoon of vegetable shortening at a time until it is runny and smooth. Never ever try to add water to the chocolate. It will not combine with the chocolate and will cause the chocolate to seize.

American Version
For all my American readers, this chocolate bark would be just perfect to celebrate the 4th of July too. Just add in a bit of blue chocolate and blue sprinkles. Swap out the maple leafs for some star sprinkles and you have the perfect treat to celebrate independence day.
Recipe
Canada Day Chocolate Bark
Ingredients
- 2 cups white chocolate
- 2 cups red chocolate
- ½ cup red and white M&Ms
- ¼ cup red and white sprinkles
- ¼ cup Canada Day sprinkles
Instructions
- Melt the two different chocolates in separate bowls in the microwave at 50% power in 30 sec. intervals until completely melted and smooth.
- Cover a cookie sheet with parchment paper and add chocolate in about 1 inch wide stripes.
- Use the back of a spoon to marble the chocolate by dragging it through the chocolate at 45 degrees and then then 45 degrees in opposite direction. (See the video for an example.)
- Sprinkle the chocolate with M&Ms, and sprinkles.
- When harden, snap into bite size pieces and enjoy.
