These Pancake Sugar Cookies are the perfect way to celebrate Pancake Tuesday! They would also be really great as an addition to a pancakes and pajamas party. Made from simple ingredients these cookies are so tasty and they really look like a little stack of pancakes.
Time Saving Idea
This is a great easy cookie recipe, the sugar cookie recipe my Grandma always used, for every occasion. It was truly one of her favorite cookie recipes. But if you don't have time to make sugar cookies from scratch you could also substitute in a sugar cookie mix, or ready bake sugar cookie dough to make your pancake cookies. These shortcuts should give you enough time to work on the best party -decorating these adorable cookies. We love simple ways of speeding recipes like this up when we're in a time crunch.
Pancake Sugar Cookies
To make the pancakes cookie base, I cut out simple round circles from the sugar cookie dough.
Icing Our Pancake Cookies
After the cookies were baked to a golden brown and cooled, it was time to make them really look like pancakes. I started out with the “butter”. To make it, I made a mixture of icing sugar and milk and mixed it to a paste consistency. Then I added in yellow food colouring so it looked a little like butter.
To make the pats of butter for the top of the pancake stack, I rolled out the frosting between two pieces of plastic wrap, and then cut it into little squares with a knife. I set the whole piece in the fridge for a little while to firm up, and went on to the icing that we would use for the syrup.
For the syrup frosting, I made a really runny icing, thinned out with milk, and maple syrup. To make it darker I added a few teaspoons of cocoa powder, and a little bit of yellow food colouring. I wanted it to be runny enough to pour off of a spoon easily.
To assemble the pancake sugar cookies, I stacked two cookies together, spooned on some of the syrup icing so that it drizzled off the edge like a real pancake stack, and added a pat of butter to each one.

Ingredients
Sugar Cookies
- 1 cup butter softened
- 1 cup powdered sugar
- 1 cup white sugar
- 2 eggs
- 1 ½ teaspoon vanilla extract
- 3 cups all purpose flour
- 3 teaspoon baking powder
- ½ teaspoon salt
For The Butter Icing
- ½ cup powdered sugar
- 1 teaspoon milk
- 2-4 drops of yellow food coloring
Maple Icing
- 1 cup powdered sugar
- 2 tablespoon milk
- 2 tablespoon maple syrup
- 2 teaspoon cocoa powder
- 2 drops yellow food coloring
Instructions
- To make the cookies begin by creaming the butter and sugars together in the bowl of a stand mixer fitted with the paddle attachment, or in a large mixing bowl with your electric mixer.
- Add the eggs, and vanilla and mix until well combined, scraping down the sides of the bowl.
- In another large bowl combine the dry ingredients of flour, baking powder, and salt and whisk together or sift.
- Gradually add the flour mixture to the wet ingredients and stir until well blended. Be careful not to overwork your dough.
- Wrap the dough in plastic wrap and let in the refrigerator for some chill time.
- Once chilled, roll out the dough on a floured surface to about ¼ inch thick and cut into circles.
- Bake the cookie shapes on a baking sheet in 350 degree oven for 8 - 10 mins.
- Let cool completely on a wire rack before icing.
- To make the icing "butter" in a separate bowl combine ½ cup powdered sugar with 1 teaspoon of milk to make a paste consistency, and then stir in the food coloring until it looks yellow like butter.
- Place the mixture onto a sheet of plastic wrap and place another on top and use a rolling pin to roll it out to about ¼ inch thick. Next use a sharp knife to cut it into small squares, that are about ¾ inch big. Place these in the fridge to set while you make the maple icing.
- To make the maple icing, combine 1 cup of powdered sugar with 2 tablespoon milk, and 2 tablespoon maple syrup, cocoa and yellow food coloring. Mix until it's a smooth consistency.
- To assemble the cookies, place the cooled cookies onto parchment paper and put a small amount of maple icing on one cooking to act as glue and stack another cookie on top. Drizzle the stack with the maple icing so that it runs down the side, but some of the cookie is still visible. Place one piece of the butter icing on top.

Hi Lisa, just a very basic list of ingredients for the frosting: icing sugar, a little butter, and some cream or milk, sometimes a splash of vanilla. Sorry I always do it by feel and never work from a recipe when I'm making frosting. Hope this helps, best of luck.
