This Three Ingredient Coconut Ice Cream Recipe is sooo yummy, and soooo easy. The perfect combination! It’s a no cook also. It’s really checking all my boxes. If you're a fan of coconut you will love this homemade ice cream.
No Cook
This recipe is so easy to make, because you don't have to cook it first. There are no egg yolks and heavy cream in this recipe to make into a custard. This coconut ice cream is more of a sherbert. We love it because this makes it so quick and easy to put together. You could make this recipe in just a few minutes, and then let the ice cream maker do all of the work for you.
Three Ingredients
This easy ice cream recipe has only 3 simple ingredients, which makes it such an easy recipe to put together without much hard work.

Coconut Milk
We used canned coconut milk. You can make it with high-fat coconut milk. You can also make it with lower fat content by using a light coconut milk. Either one works well in this recipe. We usually use full fat coconut milk because the coconut cream gives makes a creamier ice cream. The coconut milk is what gives this ice cream it's pure coconut flavor.
This is a perfect recipe to make with kids this summer -even toddlers could do this one, because this no-cook recipe is so easy.
Milk
The only other ingredients in the ice cream base recipe are white sugar and regular milk. We used 2% milk, but you can substitute whichever milk you normally use, including homo milk, 1% or skim milk.
Sugar
The final ingredient in our easy coconut ice cream is sugar. We used regular white sugar. It of course adds sweetness to the finished ice cream, and makes this one of our favourite desserts. We found ⅓ sugar to be the perfect amount but you can add more or less sugar depending on your tastes.
This recipe is made with basic ingredients that are easy to keep on hand to make this kind of ice cream anytime you want.
Can I Make This Recipe Vegan Without The Milk?
You might be wondering if you can leave the milk out. Vegan ice cream recipes are often made with just coconut milk and sugar. Good news, you can turn this into one of the dairy-free ice cream recipes by replacing the cow's milk with more coconut milk. If you want this recipe to be vegan, skip the cow's milk and use 2 cups of coconut milk instead. It will have a slightly less creamy texture, but it's still really delicious.
Ice Cream Maker
You will need to break out your ice cream maker for this recipe. It's not a good no churn ice cream recipe to make in a loaf pan because it needs the constant movement of the ice cream maker to avoid ice crystals forming and create the best texture. The ice cream maker creates the perfect creamy texture. For best results make sure to churn your ice cream in an ice cream maker. We used the cuisinart ice cream maker and makes great soft serve ice cream with the creamiest texture. You can also put the ice cream in an airtight container after you remove it from the ice cream churn and store it in your freezer.

Coconut Ice Cream Toppings
We toasted a little shredded coconut to add as a topping, it’s nice for a little crunch. Use a dry frying pan, and heat your coconut flakes until they're toasted. Keep an eye on your coconut mixture, because it can burn quickly. Be sure to let it cool before sprinkling it on your coconut ice cream. This is the perfect topping for coconut lovers.
Another create option as a topping is to add some chocolate syrup to create a chocolate coconut milk ice cream. A drizzle of caramel sauce on top of your coconut ice cream is a great topping option too.
Fresh fruit pairs really well with this ice cream also. Try serving it with chopped fresh mango pieces for a tropical taste you'll love.
Grown Up Treat
If you're serving this coconut ice cream just to adults you can turn it into a grown up treat by adding 2 tablespoon of rum to the ice cream mixture before churning it. It adds great flavor to the ice cream.
More Options
If you love vanilla coconut ice cream, you can add some vanilla extract, or vanilla beans to your ice cream mixture. Try adding 1 teaspoon of vanilla extract, or scrape the seeds of one vanilla bean and add to the ice cream ingredients before churning.
Serving
We served our ice cream in cute dessert bowls. This ice cream is also great served in an ice cream cone. But for a really special serving idea, serve the coconut ice cream in a coconut shell. Use an ice cream scoop to add the ice cream to the coconut shells and top with grated coconut, or any of your favorite toppings.
My girls enjoyed this ice cream and how easy it was to make so much that we picked up another few cans of coconut milk the next time we shopped -we figured we should probably have some on hand all summer. 😉

Coconut Ice Cream Recipe
Ingredients
- 400 mL can coconut milk
- ⅓ cup sugar
- ⅓ cup milk
Instructions
- Add coconut milk to a large glass measuring cup, and then add milk to make the total mixture 2 cups (about ½ cup of milk).
- Add in sugar and stir to completely dissolve.
- Pour into the frozen ice cream machine and churn until frozen, according to manufacture's instructions. Enjoy!
