It’s October and officially pumpkin spice month! This calls for everything pumpkin spice, including your favourite rice krispies! We've given the classic treat a little fall season makeover by adding in pumpkin spice flavor. These are perfect for enjoying this fall with a cup of coffee, or a pumpkin spice latte. ;). They'd also be a great to bring to a Halloween party, or any fall festivities.
Adding The Pumpkin and Pumpkin Spice
These cereal treats are made with real pumpkin and pumpkin spice. If you have a little pumpkin to use up, these would be a great recipe for you to try. Do not use pumpkin pie filling for this recipe. It has sugar and spices already added to it. For this recipe you want pure pumpkin puree. Look for it in the baking section at your grocery store.
We used pumpkin pie spice for this recipe. Pumpkin pie spice is a combination of cinnamon, nutmeg, cloves, and ginger. Since we only need a little for our recipe, using the ready made spice blend is perfect for this recipe. Look for the pumpkin pie spice in the spice section of your grocery store.
Easy Recipe
Just like the classic rice crispy treats, these are very easy to make and no bake dessert. This easy fall dessert has all the great taste of traditional rice krispie treats, but is made even better with the addition of pumpkin. We love how perfectly portable they are to. Bring them to the pumpkin patch.
Decorating Your Pumpkin Spice Rice Krispies
We made ours with some melted white chocolate drizzled over the top and sprinkled them with some pumpkin sprinkles to make them extra special, but they’re just as good plain, I promise. ;). If you can't find pumpkin sprinkles any orange sprinkles would be great. Another fun option is to add a little orange food coloring to them to make them orange colored. If you don't have orange food coloring you can combine a few drops of yellow and red to make orange.
I cut mine up into large squares and then cut the squares diagonally to make triangles...cause sometimes we're fancy. If you wanted to be really fancy you could roll them into balls like a little pumpkin, and then add a stem with a broken pretzel and leaf with green icing.
Keeping Your Pumpkin Spice Rice Krispies Crispy
Adding any liquid or even our pureed pumpkin to your rice krispie treat recipe can result in slightly soggy rice krispie treats. We love the taste of real pumpkin in this recipe, but o combat this potential problem, our recipe calls for you to wait and let the marshmallow mixture sit for about 20 minutes before adding in the rice krispie cereal. This ensures that the rice krispie cereal stays nice and crispy, and eliminates the soggy cereal problem.
Storage
Store your pumpkin spice rice krispie treats in an airtight container at room temperature.

Recipe
Pumpkin Spice Rice Krispie Treats
Ingredients
- 3 tablespoon butter
- 16 oz. bag of regular or mini marshmallows
- 2 tablespoon pure pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon pumpkin pie spice
- 6 cups rice krispies
- optional: melted white chocolate chips or wafers for drizzling and pumpkin sprinkles
Instructions
- In a large saucepan combine butter, marshmallows, and pumpkin puree. Heat over a medium heat while stirring, until the butter and marshmallows are completely melted and well combined.
- Remove from the heat and add in the vanilla, and pumpkin spice and stir to combine.
- Let the hot mixture stand for about 20 min. Allowing it to cool before adding the rice cereal will help them from becoming too soggy. After 20 min. stir in the rice krispies until completely combined.
- Spray a 9 x 13 inch pan with nonstick cooking spray and then pour the cereal mixture into it. Use a rubber spatula sprayed in nonstick cooking spray to smooth out the mixture. Allow to set and then cut the crispy rice treats into squares or triangles with a sharp knife.
- Optional: Add a white chocolate drizzle and pumpkin sprinkles
