Have you noticed these cute marshmallow mug toppers at stores like Target this Christmas. They're so cute and perfect for topping your hot chocolate. But they can also add up, so I thought why not make my own?
This marshmallow recipe is a favourite that I've made lots of time. Check out my recipe for coffee flavoured marshmallows here. You might also like our chocolate, and Bailey's flavoured marshmallows here.
Homemade marshmallows are actually quite easy to make, and the taste is amazing. Generally speaking, a homemade version of anything usually tastes better than store bought. And marshmallows are no exception to that. Homemade marshmallows are so much lighter and fluffier than store bought.
Marshmallow Mug Toppers
To turn these homemade marshmallows into mug toppers, I made then in a more shallow pan than usual. I used a cookie sheet which was perfect. Making these marshmallows thinner than normal homemade marshmallows, allowed me to use a cookie cutter to cut then into fun shapes, perfect for floating on top of your mug of hot chocolate.
I used a snowflake and a heart cookie cutter shape to make mine, but the possibilities really are endless. I've noticed some store bought ones shaped like houses, or mittens, or candy canes. All these would work great too. The only thing to consider is the size of our average mug and the size of the cookie cutter. You want a finished marshmallow that will fit inside your mug easily.
Adding Chocolate and Sprinkles
The finished marshmallows are perfect on top of hot chocolate as is, but if you want to make them even more special, consider adding some special toppings to your marshmallows. We drizzled some with melted semi-sweet chocolate, and added some sprinkles. You could use dark, milk, or white chocolate for your drizzle, or even dip them melted chocolate.
We choose some sprinkles, and added them while the chocolate was still melted so they would stick. Any sprinkles would work, including Christmas ones for the holidays, or snowflakes for any winter day. You could also add coloured sugar instead. Another great option or the mint lover is crushed candy cane pieces.
Packaging Your Marshmallows
Once your marshmallows are finished, package them up for gift giving. Marshmallows will last up to three weeks, in an air tight container. We packaged ours in cellophane bags, tied with twine. Package them separately, or use a larger bag to add more.
These are really perfect for gift giving. Check out our homemade hot chocolate mix gift here with the recipe. The homemade hot chocolate mix and marshmallow mug toppers make a really great gift, especially around the holidays.
Special Equipment
Homemade marshmallows aren't difficult to make, but you do need a couple of special pieces of equipment.
You will need a candy thermometer. These are easy to find on-line, or at any good kitchen store. They're aren't expensive at all. If you are a fan of homemade candy, you'll use a candy thermometer over and over. You can't make this recipe without one, because you have to bring the sugar mixture to the exact right temperature.
You'll also need a stand mixer. This recipe is whipped for up to 15 minutes. You wouldn't be able to do this by hand, and it would would be difficult with even a hand mixer. A stand mixer is the perfect equipment for this job.
We've seen these cute little marshmallows in lots of stores, but we knew we could make better ones at home, and for a fraction of the price. These turned out so great. They're super cute, really delicious, and perfect for gift giving.
Recipe
Homemade Marshmallow Mug Toppers
Ingredients
- 3 7 g packages unflavoured gelatine
- 1 cup very cold water divided
- 1 cup white corn syrup
- 1 ½ cup white sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla
- ½ cup cornstarch
- ½ cup powdered sugar
- ½ cup semi sweet chocolate chips
- 1 tablespoon sprinkles
Instructions
- Place ½ cup of wter, and the gelatine in the bowl of a stand mixer, with the whisk attachment.
- In a pan combine the remaining water, corn syrup, sugar, and salt. Cook over a medium high heat, until a candy thermometer reaches 240 degrees F. This will take about 8 minutes. As soon as it reaches 240 degrees, remove it from the heat.
- With the mixer running on low speed, pour the sugar mixture down the side of the bowl slowly. Once the sugar mixture is all added, turn the mixer onto high speed. Let the mixture whip for about 12-15 minutes, until the outside of the bowl is lukewarm and no longer hot, and the mixture is light and fluffy. In the last minute, add the vanilla to the mixture.
- Meanwhile, prepare your pan. To make the marshmallow thin enough to be cut out with a cookie cutter, we used a cookie sheet. Spray the cookie sheet with cooking spray. Combine the cornstartch, and powdered sugar in a bowl, and use it to coat the sprayed cookie sheet. Reserve the extra cornstarch, and powdered sugar mixture.
- Ater the marshmallow mixture is finished whipping, use an oiled spachula to spread in evenly into the cookie sheet. Sprinkle the marshmallows with more of the cornstarch and powdered sugar mixture. Let set at least 4 hours, or overnight.
- To create the mug toppers, use cookie cutters to cut out shapes. Coat the cut edeges with the cornstarch and powdered sugar mixture.
- To decorate the marshmallow cut outs, melt chocolate in the microwave, and use a ziplock bag with the corner snipped off to drizzle the marshmallows with chocoalte. While the chocolate is still melted add sprikles.
