When baking soda is added to tomato soup it reduces the pH level of the mixture and helps break down the tomatoes resulting in a creamier and silkier soup. A quick tip, use a lid on the frying pan while your cooking to keep the heat in and help melt the cheese. The Best Homemade Copycat Campbell's Tomato Soup
Ingredients
- 1 ½ tablespoon olive oil
- 1 ½ tablespoon butter
- 1 small onion diced
- 2 tablespoon flour
- 2 cups milk
- ¼ teaspoon baking soda
- 100 fl oz can tomatoes
- 3 ½ teaspoon sugar
- salt to taste
Instructions
- Cook the diced onions in the oil and butter in a large pot over medium heat, until they are softened and translucent.
- Add the flour to the pot and stir and cook for a minute or two.
- Add in the milk slowly, and whisk until smooth.
- Add in the baking soda, tomatoes and sugar.
- Simmer the tomato mixture for 10 minutes, and then blend with an immersion blender. Add salt to taste, and enjoy!
