It's almost Valentine's Day and nothing could be more special for your sweetheart than homemade Chocolate Truffles. These were really, really delicious, and pretty easy to make. We've dressed these ones up for Valentine's day with a pink chocolate drizzle, and heart sprinkles, but you could do this for any occasion. Use orange chocolate and Halloween sprinkles, red and green at Christmas, try red, white, and blue for the 4th of July, or just keep them plain for any time of year.
Chocolate
When it comes to making truffles with only three ingredients, there is nowhere to hide. Your chocolate must be high quality chocolate to make the best chocolate truffles. It's worth spending a little extra to get Belgian chocolate, or whatever your personal favourite kind of chocolate is, because you will definitely taste the difference in the first bite of this recipe. I like to use a Belgian milk chocolate for these. It gives them a rich, sweet taste.
If you want to make dark chocolate truffles you can. Just use dark chocolate instead of milk chocolate in the recipe.
Toppings
When it comes to different toppings for your chocolate truffles there are lots of great possibilities to choose from. You can keep it simple or have lots of fun with your flavor combinations.
I made these for our special Valentine's Day in Paris dinner party, and they were a hit. I learned that the chocolates are traditionally coated in cocoa powder in France, and that's where they get the name truffle, since the coco was reminiscent of the dirt that actual truffles are found in, and covered in. The cocoa dusting adds a little bitterness to the milk chocolate center and make the chocolate truffles less sweet. If you're a dark chocolate fan, you may really like the traditional cocoa powder dusting on the finished truffles. If you find it's too bitter for you, you can mix half and half cocoa powder and icing sugar for a sweeter version of the coated balls.
If you want to create a chocolate shell on the outside of your truffle you can dip the truffle into some melted chocolate to create the outer coating. Or you can roll them in a variety of different coatings. Choose from any fun topping to roll the chocolate truffle mixture in, such as
- unsweetened cocoa powder
- shredded coconut
- chopped nuts
- oreo cookie crumbs
Troubleshooting
Sometimes while the chocolate is melting with the heavy cream it can separate. This can occur if the heat is to high, the chocolate melts too quickly, or the cream is too cold when you add it. If this happens you may be able to save it by using a hand mixer to beat the mixture until it comes back together.
Sometimes the chocolate coating can bloom. This occurs when the milk solids come to the surface. It's fine to eat, but doesn't look as good. This is because you haven't tempered the chocolate, or you placed the melted chocolate into the fridge to set and it was too cold. Using chocolate candy melts as your outer coating should help prevent this, because it isn't pure chocolate and doesn't behave the same to different temperature changes.
Store your chocolate truffles at room temperature in an airtight container.

Easy Chocolate Truffle Recipe
Ingredients
- 12 oz. Belgian milk chocolate
- ⅓ cup of heavy whipping cream 35%
- 1 teaspoon vanilla extract
- optional toppings: chocolate candy coating in milk chocolate and pink chocolate, cocoa powder, Valentine sprinkles
Instructions
- Chop the milk chocolate and place the place the chopped chocolate and the cream in a double boiler over medium heat. Stir to melt the chocolate.
- Once the chocolate is melted, remove from the heat and stir in the vanilla and pour the chocolate mixture into a metal mixing bowl and let it set at room temperature.
- Once the chocolate mixture has set but is still a malleable texture, scoop out a small balls with a melon baller,small cookie scoop, or teaspoon, and roll them with your hands to create the truffle centre. Set the truffle balls onto a parchment paper lined baking sheet.
- Coat the truffle centre with cocoa powder, or melt chocolate candy coating and dip the truffle centres in it to coat. Decorate with sprinkles, or drizzle with melted pink candy coating. Let the chocolate set at room temperature and then enjoy.
