Where are my pancake people at? I have to admit that I used to be more of a savory breakfast person. Bacon and eggs were my very favorite weekend morning breakfast. This might have had something to do with the fact that I was raised by savory breakfast people. Fast forward to being married with two children and somehow finding myself in a whole household of sweet breakfast people. Pancakes were on the menu every weekend when my girls were little, and I have to say I kind of love to start the day with them now too.

Homemade Pancakes
Homemade pancakes from scratch are just so much better than using a pancake mix. This easy recipe makes the best pancakes, and they're really quick. The first time I ever had pancakes made from scratch was at a friends house after a sleepover as a teenager. They were the best and fluffiest pancakes I ever had. I was an immediate convert. And making pancakes from scratch really only takes a few more minutes than making them from a mix does.
Buttermilk or Regular Milk?
You can make this small batch pancake recipe with buttermilk or with regular milk. The buttermilk tends to make slightly tangy and more fluffy pancakes, and they are really delicious. But if you don't have any buttermilk on hand you can make these with regular milk and they're still fluffy and delicious. We love that you can make this recipe with simple ingredients that you always have on hand like regular milk, or buttermilk if you have some.
Why are buttermilk pancakes more fluffy? The buttermilk has some acidity to it and reacts with the baking soda to create more bubbles, more height to the pancakes, and fluffier overall texture. Use buttermilk in this recipe instead of regular milk to make fluffy buttermilk pancakes.
Pancake Add-ins
I love plain pancakes, and this small-batch pancakes recipe makes amazing plain pancakes. Serve them with a little melted butter on top and some maple syrup and you have the perfect pancakes. These really are our favorite toppings, but if you like to jazz things up a little, you can add some other toppings to your pancakes.

We love our pancakes with a side of bacon or breakfast sausage. That combination of maple syrup, fluffy pancakes, and bacon or sausage just can't be beat. If you're making a big breakfast to start the day add a second side of eggs, and even hashbrowns for an amazing breakfast feast.
Pancake Size
We made our pancakes medium sized. We used ½ cup of batter to make 4 pancakes. If you want smaller pancakes you could use a ⅓ cup of batter for 6 pancakes, or ¼ cup of batter for 8 small pancakes. Or make really big pancakes with 1 cup of batter each to make 2 pancakes. Adjust your cooking time according to the size of the pancakes. Smaller pancakes will cook more quickly, and larger pancakes will take longer to cook through.
Storing Pancakes
We're making a small batch so that there's no leftovers, but just in case you can store these in an airtight container in the refrigerator. Reheat them in the microwave or toaster the next day.
Top Tips
- You'll know your pancake is ready to flip over when little bubbles form all over the surface.
- Don't over mix your batter. A few lumps are fine. Over mixed pancake batter develops too much gluten and creates tough pancakes.
Your baking powder or baking soda may be expired. Check the date on both of them to make sure they're in date. Also, using butter milk will make more fluffy pancakes as the acid in the butter milk reacts with the baking soda making bubbles. If you love fluffy pancakes then be sure to make these with butter milk not regular milk.
Your pancakes may be tough if you over work the batter. Mix well, but don't worry about a few lumps in your batter. Avoid the temptation to over stir the pancake batter which can develop too much gluten and make tougher pancakes.

Pancakes For Two Recipe
Ingredients
- ¾ cup all purpose flour
- 1 ½ tablespoon sugar
- ¾ teaspoon baking powder
- ¼ teaspoon baking soda
- ¼ teaspoon salt
- ¾ cup milk or buttermilk
- 1 ½ tablespoon butter melted
- 1 egg
- ¼ teaspoon vanilla extract
Instructions
- Combine flour, sugar, baking powder, baking soda, and salt in a large bowl, and use a whisk to stir the dry ingredients together.
- In a separate bowl combine the milk, melted butter, egg, and vanilla and whisk to combine.
- Pour the wet ingredients into the dry ingredients, and stir together. Don't over mix, some small lumps are fine.
- Heat a large frying pan or electric griddle over medium heat. Spray with non-stick cooking spray. Use a ½ cup measure to make 4 pancakes. When small bubbles appear on the surface of the pancake, flip it over and cook the other side until golden brown. Serve hot with butter and maple syrup.
