Hi, Maddie here -I’m the youngest member of the “Life is a Party” family and I love to bake. Today I’m taking over the blog for my mom, and I’m going to be sharing an amazing recipe for Jelly Donut Pancakes. These pancakes are filled with jam inside and then sprinkled with powdered sugar on top. They're like a regular pancake and a jelly donut got together and had a baby and I know you'll love them!
I make these pancakes quite often on school mornings. I’ll get up earlier than the rest of my family and make them. I love to bake in a quiet house and they love to wake up to warm, fluffy pancakes for the perfect breakfast. These are such a fun alternative to regular pancakes. Next time you're craving homemade pancakes, you should try them.
How Do You Stuff A Pancake?
These pancakes are stuffed with strawberry jelly and when you cut into them it comes oozing out. You might be asking yourself "how do they get stuffed?” It’s a very simple technique much easier than you think.
When you're cooking the pancakes you start with a regular spoonful of pancake batter.
Then add a teaspoon of jam to the centre. You then cover it up with more batter on top of the jelly and when it is cooked flip it over just like a regular pancake.
When eating the pancakes I would suggest cutting them like a pizza so that you get a bit of jam in every bite. These jelly pancakes are sure to become a new favorite. You might also like a maple syrup on top too.
Can I Use Pancake Mix?
We made our pancake batter from scratch for these pancakes and they're so delicious. You might be wondering if you can use your favorite pancake mix to make these jelly donut pancakes. If you're looking for a shortcut you can totally use pancake mix to make these. Just make your pancake mix following the package directions, and use our method to add the jam or jelly inside.

Jam or Jelly
We’ve used strawberry jam for these pancakes today, but you can use whatever your favorite jam or jelly is. We also love them with raspberry jam. Blueberry jam is also a delicious option. These are amazing with homemade jam, but whatever your favourite jam or jelly is will work great.
More Options
These jam stuffed pancakes are so good that it got us thinking about other things that would be delicious inside a pancake. Instead of jam you might also like a peanut butter pancake. Just use the same technique we outlined above, but substitute peanut butter instead of jam, or try a little of each for a pb and j version. And for the chocolate lover try using nutella inside for another great option. These are few of our favorite fillings to try.

Jelly Donut Pancakes
Ingredients
- 2 ½ cups all purpose flour
- 3 tablespoon sugar
- 2 ½ teaspoon baking powder
- ½ teaspoon salt
- 1 ½ cups milk
- 3 tablespoon butter melted
- 2 large eggs
- ½ teaspoon vanilla extract
- ¼ cup strawberry jam
- ¼ cup powdered sugar
Instructions
- Mix the flour, sugar, baking powder and salt in a large bowl.
- In another bowl, mix the wet ingredients; the milk, melted butter, eggs, and vanilla.
- Combine the dry and wet ingredients and mix, but don't over mix. A few lumps are fine.
- Spoon batter onto a hot griddle coated with a little butter, or frying pan at medium-high heat to cook. Add a spoonful of jam into the middle, and then top with some remaining batter to cover.
- Cook on one side until the small bubbles that appear at the edge of the batter pop, then flip over and cook on the other side until golden brown.
- Sprinkle finished pancakes with powdered sugar and serve warm. Enjoy.
