was surprised how easy this little treat was to make at home. It all comes together in a few minutes in the blender. It's the perfect sweet treat. My teenagers who seem to love any coffee beverage just love these in the summertime. And you can actually make them at home, faster than you can go to Tim Hortons and pick one up. And making them at home will cost you at fraction of the price, especially if you are buying them for your teens! You will never need to go out for a Tim Hortons iced capp again.
Sugar Free Keto Version
I'm calling it a treat, but it is very keto friendly and only has a few carbs in it (depending on what brand of heavy whipping cream you use). And if you are keto, you probably already have all the ingredients on hand. Some people add collagen and MCT oil powder -which you can do to make a frozen bulletproof coffee. I liked it as is.
For this recipe I used Monk Fruit Erythritol as the sweetener. I usually buy it in bulk at the bulk barn in Canada. It can be used at a one to one ratio as a replacement for regular sugar. I usually find this particular one is a little less sweet than regular sugar. I've read that monk fruit erythritol is usually slightly sweeter than regular sugar. Use my measurement as a guide, but adjust depending on whatever sweetener you prefer to use, and according to your own taste. Even if you're not on Keto, but looking for a sugar free options because of diabetes or so it has fewer calories this version is perfect.
I Love Ice Caps
I love a good ice cap. Many, many years ago -I think when ice caps were relatively new I was a new teacher. I had a very small class of 9 students in a private school. Our last (and one of our favourite) units for English was poetry writing. Our culminating activity for the unit was our own poetry cafe. My students were very excited to spend the whole period sharing their work with one another and creating our own cafe environment.
When we talked about a cafe they excitedly told me we should get ice caps because it was so hot out, they were so good, and it would be perfect for our cafe vibe. I had never had one before. On the day of the cafe I slipped out at recess and bought us all ice caps. You would have thought I had given them the moon. They couldn't believe it, and were so happy that I'd surprised them with this treat. It set the tone for an amazing poetry cafe, and is still one of my very favourite memories of teaching.
I think every time I've had an ice cap since then, I've thought fondly of them, my first class. I definitely missed this old favourite summer treat so I'm pretty excited to have an easy to make and delicious keto version to enjoy this summer. And my kids are loving the regular version made at home too.
Blender
You will need a blender to make this drink. It whips up extra fast in a high-speed blender or magic bullet, but I had no problems making it in my regular blender that I use for smoothies all the time.
Coffee
Use whatever coffee you love and brew it how you normally do. I like a premium blend coffee made in a French press for the best coffee flavour, you can use a coffee maker instead, or a even instant coffee for your own version. Next time you brew a fresh pot and have some leftover you can even pop it into the fridge and save it to make an iced capp later.
Other Options
We used heavy cream for our iced capps. It really gives the best creamy texture and flavor to your iced capp, and is the most like a real Tim Hortons iced capp. You can do some ingredient substitutions if you need to. Replace the cream with cold milk if you're looking for a lower calorie version with less fat content and not concerned about carbs. Also if you have allergy or dietary issues you can substitute almond milk or coconut milk or another non dairy milk alternative. It will taste a little different but will still be delicious.
You can also substitute the cream with chocolate milk for a chocolate version of your favorite iced coffee drink.
This is the perfect pick me up in the afternoon -and remember you can make a regular version or sugar free version. When it's too hot for regular coffee this is such a refreshing way to enjoy your coffee. Any coffee drinker will love this option all summer long.

Tim Hortons Copycat Iced Capp
Equipment
- blender
Ingredients
- 2 cups brewed coffee
- 4 cups ice cubes
- ⅓ cup heavy whipping cream
- 4 tablespoon sugar or monk fruit erythritol or favourite sweetener for the sugar free version
- ½ teaspoon vanilla extract
Instructions
- Brew 2 cups of regular coffee.
- In a blender, combine ice, cream, sugar or monk fruit erythritol, vanilla and coffee.
- Blend until smooth and completely combined.
- Pour into 2 tall glasses and enjoy.
