Nectarine and Blueberry Galette: literally make in minutes with frozen puff pastry, so easy and the perfect way to enjoy fresh nectarines and blueberries.

This little nectarine and blueberry galette was the loveliest little surprise. I had some leftover puff pastry and decided to throw together a little tart. Since nectarines and blueberries are in season and I had some already, they became the filling. And what a perfect filling they were!
What Is A Galette?
A galette is a free form pie made without a tart tin. It's pastry wrapped around a filling, in our case a fruit filling. The difference between a pie and galette is that a pie is baked in a sloped sided pie plate, but a galette is baked on a baking sheet, with the pastry wrapped around the edges. It tends to be much easier to make than a pie, because there is no top crust, and it doesn't need to be fitted into a pie pan, and no fussy crust-crimping around the outside either. A galette is more rustic than a pie. These free-form pies are sometimes called the lazy man's pie. It is one of the easiest ways to make a quick pie. Galettes are not always made with fruit filling. You can also have a savory filling. It's any free form pie.
Nectarines and Blueberries
We used nectarines and fresh blueberries for our galette. It's the time of the year when they're both in season here, and they are great combination together. We used sweet nectarines, you could use ripe peaches instead. The often-overlooked nectarine is a great choice for this galette though because with it's smooth skin, you don't have to peel the fruit to make your pie filling. Feel free to substitute peach slices for the nectarine slices if you wish to, but do be sure to peel the fruit if you choose to use peaches.
We paired the nectarines with blueberries. The combination of blueberries and nectarines are such a great combination. These summer fruits are delicious and juicy and so along with a little sugar to sweeten the fruit you will also need to add some flour to thicken the fruit juices.
Other Fruit Options
As already mentioned you could easily swap the nectarines for peaches in this recipe. If you were using peaches though, be sure to peel them first. You could really use any stone fruit in place of the nectarines.
We used blueberries with the nectarines, but any fresh berries would be delicious. You could use strawberries, or raspberries in the place of blueberries and any of them would make a great flavor combination with nectarines. If you change the berries, just use 1 cup of any other berry you like in place of the blueberries, or do a combination of berries.
Pastry
We used store bought puff pastry for our galette dough. This the easiest way to make this quick dessert. Look for an all butter pastry dough in the freezer section of your grocery store. Follow the directions on the package for thawing the dough. The puff pastry makes a perfect buttery crust, that's extra flakey and crispy, and puffs up when baked. If you prefer you could use regular pie pastry instead of puff pastry. Make pie pastry from scratch or pie already prepared dough in the refrigerated section of the grocery store, or frozen pie pastry in the freezer section of the grocery store.
To form the galette with the puff pastry, you first pile fruit mixture in the center of the dough in an even layer and then wrap the buttery pie crust around the fresh fruit filling to make a large circle.
Once the galette is formed and ready to bake on a large baking sheet covered with parchment paper, we brush the galette with some milk. You could also use a egg wash made from beaten egg or some heavy cream. This will help the pastry to brown. And lastly the pastry is sprinkled with some coarse raw sugar. The sugar adds some crunch to the flakey pastry, as well as sweetness.
Ice Cream or Whipped Cream
The nectarine blueberry galette is a wonderful combination of tangy, sweet, and juicy fruit combined with buttery and flaky pastry. We love to serve it with a scoop of vanilla ice-cream or some sweetened vanilla whipped cream. Both options add a wonderful vanilla creaminess to the dish, and are such a welcome addition.
Serving Suggestion
Serve the blueberry nectarine galette with a scoop of vanilla ice cream, or whipped cream. This galette recipe is best served the day it is made, but if you have leftovers store them in an airtight container or wrapped in plastic wrap at room temperature.

Make An Extra
One sheet of puff pastry makes a fairly small pie. If you are baking for a larger group you may need to bake two. Most puff pastry is sold in packages of two sheets, so it's very easy to make a second pie for a crowd if necessary.
Recipe
Nectarine and Blueberry Galette
Ingredients
- 1 sheet frozen puff pastry
- 2 nectarines
- 1 cup blueberries
- 3 tablespoon white sugar
- 1 tablespoon flour
- ½ teaspoon vanilla extract
- milk to brush on the edges
- 1 teaspoon Demerara raw sugar to sprinkle over top
Instructions
- Thaw puff pastry sheet according to package instructions. Lay out thawed puff pastry on a parchment paper lined baking sheet.
- In a large bowl combine sliced nectarines, blueberries, white sugar, flour, and vanilla. Stir to combine. Pour the fruit mixture out in the center of the crust, with a 2-inch border.
- Fold in the edges of the dough, around the fruit filling.
- Brush the edges of the pastry with a little milk and sprinkle the whole galette with some Demerara sugar.
- Bake at 450 degrees for about 12 -15 minutes until golden brown.
