If you’re a donut lover, and a Nutella lover, these Nutella Filled Mini Donuts are a match made in heaven! They are sweet little bites of sugary, chocolatey, hazelnutty goodness. What could be better than fresh homemade nutella donuts?
Bread Machine Donut Dough
These mini donuts are made with an easy bread machine dough. It's very versatile. I’ve used the same donut dough that I used for my mini jelly donuts -see them here. This time they’re rolled in powdered sugar, and filled with Nutella.
I like making the dough in a bread machine because it's so easy. The bread machine does all the hard work for you. Just add your ingredients and let the machine make the dough for you. Set your bread maker to the dough setting and layer in the ingredients. It's important when you're using a bread maker to layer in the ingredients exactly how the recipe says to. You want your yeast on the very top so that it activates properly.
We aren't using the bread machine to bake the donuts. We're just making the dough in the bread maker, and then shaping and frying the donuts separately.
Without A Bread Maker
Even if you don't have a bread machine you can also make this dough my hand. Start by adding your warm water, warm milk, sugar, and yeast into the bowl of a stand mixer or in a mixing bowl. Let it set until it begins to get foamy. Add the remaining dough ingredients eggs, butter, flour, and salt and mix together on low, scape down the sides of the bowl, and mix again. Or in a mixing bowl use a wooden spoon to mix all the ingredients together.
Next knead the dough by hand, or with the dough hook attachment in your stand mixer for 5-7 minutes. Next let your dough rest in a greased bowl that's covered in a warm spot to let the dough rise until it has doubled in size, about 1.5 hours. After that the dough is ready and you can follow the recipe below for shaping, second rise, frying, and filling the donuts.
Frying Your Donuts
These donuts are best deep fried in oil. This recipe is not meant to be baked or cooked in a air fryer. It is easiest to fry these in an at home deep fryer. These are not too expensive and you buy them anywhere that sells kitchen appliances. They make it much easier to fry donuts because they have a built in thermometer that regulates the temperature of the oil and keeps it even.
You can use a pot of oil on a stove to fry these donuts. Be sure not to over fill the pan with oil. Also do use a candy thermometer on the side of the pan to monitor the temperature of the oil. Adjust your heat accordingly to try and keep the temperature as even as possible. If you find that the donuts are browning quickly on the outside but still raw in the middle, your oil is too hot.
We like to fry in peanut oil. It has a high smoke point and also doesn't transfer the tastes of other food, so you can reuse the oil for frying other things without affecting the taste. You can also use vegetable oil, if you prefer it for deep frying.
Sugar Coating
We rolled our donut holes in powdered sugar. We think the powdered sugar and the nutella filling go perfectly together. You can also roll your hot donuts in regular granulated sugar if you prefer, or even cinnamon sugar.
Filling Your Donuts
These donuts are filled with Nutella inside. Look for a special donut filling tip (Tip #230) to add to your icing bag. This tip is extra long and makes filling these little donuts so much easier. You can also use this tip for other fillings like jam and custard.
You want to completely fill, but not over fill or under fill your donuts. Fill your first one and then break it open to make sure it's filled enough and adjust the feel and pressure accordingly until you hang of it.
Storage
These donuts are best eaten the day they are made. If you have leftovers you can store them in an airtight container at room temperature.
You can also store the unbaked dough in the fridge for a day ot two. This is a great way to keep them if you don't want to eat them all at once, because fried donuts really taste best when they're fresh. We fried up half a batch of the dough and made these donuts, and used the other half of the dough for jelly donuts the next day -see how to make the jelly donuts here.
These are best eaten the same day they’re made….in my experience, it’s not a problem. 😉
These would be a really sweet addition to any special occasion, and they make a brunch extra special, they're also amazing on Christmas morning, Easter morning, Father's day breakfast -really anytime is a great time for amazing nutella donuts. These homemade donuts are stuffed with hazelnut spread and rolled in powdered sugar are really the most delicious treat.

Bread Machine Mini Nutella Filled Donut Recipe
Ingredients
- ¾ cup lukewarm milk
- 2 tablespoons warm water
- 1 egg beaten
- 3 tablespoons butter
- ¼ cup white sugar
- ½ teaspoon salt
- 2 ½ cups all-purpose flour
- 2 ¼ teaspoons 1 pkg. active dry yeast
- oil for frying
- 1 cup powdered sugar
- 1 ½ cups Nutella
Instructions
- When making dough in a bread maker, the order the ingredients are added in is important. Add ingredients layer by layer, and do not mix. For the first layer in the bread maker, add milk, water, and beaten egg. Next add the butter, sugar and salt. Finally add the flour, and the yeast as the last ingredient. Set bread maker to dough setting and start the machine.
- When the dough is finished, roll dough out using a rolling pin on a lightly floured surface to about a ½ inch thick. Use small circle cookie cutters to cut out the donuts. Reroll your scapes and cut out the donuts once more. Lay the donuts on a greased cookie sheet, cover with plastic wrap and allow to rise around 30 min. in a warm place.
- Fry donuts in oil. The oil temperature should be 350 degrees, using a deep fryer or a pot of oil on the stove with a candy thermometer in it to check the temperature. Fry the donuts on one side until they are golden brown, then flip over and cook over side. (If the outside is too brown and the middle isn’t cooked, the temperature of your oil is too hot -you will have to watch the temp as you go, and adjust as needed, or use a deep fryer.) Fry the donuts in batches so you do not overcrowd the pan and cool off the hot oil too much. Use a slotted spoon to remove them and let the excess oil drain off.
- Roll the hot donuts in powdered sugar to coat them, when they're cool. To fill the donuts with Nutella, wait until they are cool, then use a piping bag with a #230 tip to pipe the Nutella into the middle. These donuts are best eaten the same day they're made.
