Fresh Strawberries

Cheesecake Filling
This no-bake cream cheese filling is creamy and sweet and delicious. We prefer to use full-fat cream cheese in this recipe as it gives the best creamy texture to the pie. You can substitute low fat cream cheese in this recipe if you prefer to but it will be a slightly different texture. The cream cheese combined with sugar and almond flavoring creates a cream cheese mixture that is light and delicious. The cream cheese layer combines perfectly with the cookie like crust, and tart sweet glazed strawberries.
This filling includes almond extract which gives it a unique and delicious flavor. If for some reason, like a nut allergy you can not use almond, feel free to substitute vanilla extract for a different but delicious flavor.
Easy No-Roll Pie Crust
Unlike a no-bake strawberry pie, this one has a quick and easy pie crust that needs a few minutes in the oven to bake. It's more like a cookie dough than a traditional pastry crust. It's mixed together and then pushed into the bottom of the pie plate to form the crust, with your fingers. No difficult pie pastry crust to form and roll out with a rolling pin. Just mix this quick crust together, press into the pie plate, and bake for 10 min.
Allow the pie crust to fully cool before adding in the layer of cream cheese pie filling, to avoid it melting. Then top with strawberries and glaze and let it all set in the fridge for a few hours.
Whipped Cream
Serve this pie with some whipped cream on the side. To make homemade whipped cream, add 237mL of heavy whipping cream to a stand mixer and whip until stiff peaks form. Add 1 teaspoon of vanilla extract, and 3 teaspoon sugar, and mix to combine.
Store this strawberry pie in the in an airtight container or wrapped in plastic wrap, in the refrigerator.

Strawberry Cream Cheese Pie
Ingredients
Pie Crust
- 1 ½ cups all-purpose flour
- 2 teaspoon sugar
- ½ cup corn oil
- 3 tablespoon cold milk
Cream Cheese Filling
- 1 -8 oz. pkg. cream cheese room temperature
- 1 teaspoon almond flavoring
- ½ cup sugar
Strawberries and Glaze
- 4 cups fresh strawberries sliced
- ¾ cup water
- 3 tablespoon cornstarch
- 1 cup sugar
- 1 teaspoon fresh lemon juice
- whipped cream
Instructions
- To make the pie crust, in a large bowl mix together the flour and sugar. Mix oil and milk in a separate bowl, then add to the flour and sugar mixture. Fully combine and press into a pie plate for form the pie crust. Bake at 400 degrees for 10 min., and then place on a wire rack to cool.
- For the cream cheese filling, combine the cream cheese, sugar and lemon juice in the bowl of a stand mixer fitted with the paddle attachment and mix until smooth. Spread the mixture over the cooled pie crust.
- Place 3 cups of sliced fresh strawberries on top of the cream cheese filling.
- To make the glaze for the strawberries, combine 1 cup of sliced strawberries, water, cornstarch, 1 cup of sugar and lemon juice in a small saucepan and bring to a boil. Simmer for 3 min while stirring, and then remove from the heat. Allow to cool slightly, and then pour the strawberry glaze over the strawberry filling. Let the pie set in the refrigerator for several hours before serving. Serve with whipped cream.
