I'm kind of new to cornbread. I didn't grow up eating it. The first time I tried this recipe was at a friend's house. They were having a tex-mex menu and served this cornbread. Although cornbread doesn't rise much. It's typically quite a dense quick bread. Quick bread gets its name from being quick to make. Don't Over Cook

He did try it and later that day said to me how amazing it was and how could he ever doubt me. Ha, ha. Just trust me. The Best Sweet Cornbread Recipe
Ingredients
- ½ cup cornmeal
- 1 ½ cups all purpose flour
- ⅔ cup sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- ⅓ cup vegetable oil
- 3 tablespoon melted butter
- 1 tablespoon honey
- 2 eggs
- 1 ¼ cups milk
Instructions
- Preheat the oven to 350 degrees F.
- In a large bowl combine the cornmeal, flour, sugar, baking powder and salt.
- In separate bowl combine the oil, melted butter, honey, eggs and milk. Stir with a whisk to fully combine.
- Add the wet ingredients to the dry ingredients and stir with a wooden spoon to fully combine, but don't over stir.
- Spray an 8 x 8 baking pan with non-stick cooking spray and then pour batter into the pan.
- Bake in a preheated oven for 35 minutes, until a toothpick inserted into the center comes out clean, but take care not to over bake.
